Natural

In natural processing, the whole cherry dries in the sun with the fruit intact, and the bean is hulled out afterwards. Fermentation happens inside the drying fruit, which is why naturals taste fruitier and heavier than washed lots from the same farm.

Fruit-forward, full-bodied, sweet

Typical production steps

1) Harvest and float-sort ripe cherries; 2) dry the whole cherry on raised beds or patios, raking regularly, typically 15–25 days or more (Ninety Plus reports 15 days of drying for its Juliette lot); 3) rest, then hull the dried fruit off the bean. Variations include raised-bed-only drying, shade drying, and cherry sorting mid-dry.

What the label does and doesn't establish

A natural label says only that the fruit dried on the bean. It does not guarantee sweetness or a flavor profile, and 'natural' here is unrelated to 'natural flavors' as a food-labeling term. Naturals can also be fermented anaerobically first — 'Natural (ASD)' and 'natural carbonic macerated' lots are still naturals.

Attributed sensory descriptions

Sellers attribute fruit-forward, jammy, fuller-bodied cups — for example, Ninety Plus describes its natural Perci lot as strawberry, milk chocolate and peach (the seller's descriptors, not ours).

Seller-attributed cupping language — a processing label never guarantees a flavor.

Documented use in Panama

Well documented in Panama: Ninety Plus states it was the first to naturally process the Gesha variety there, and natural Geisha lots routinely win Best of Panama categories — including Esmeralda's 97-point natural at the 2025 auction.
