Process

Honey

Honey processing sits between washed and natural: the skin is removed but some or all of the sticky fruit mucilage is left on the bean during drying. Producers grade honeys — yellow, red, black — mainly by how much mucilage stays on and how slowly the coffee dries.

General coffee-processing knowledge, sourced below. Panama-specific claims are separated into their own section.

Characteristics
Sweet, syrupy, balanced
Typical production steps
1) Depulp without (or with minimal) water; 2) leave mucilage on the parchment; 3) dry on raised beds or patios, usually more slowly and carefully than a washed lot, with raking to avoid over-fermentation. Black honeys retain the most mucilage and dry slowest; yellow honeys the least. Variations between farms are large and the color names are not standardized.
What the label does and doesn't establish
Despite the name, no honey is involved — the label refers to the sticky mucilage. It does not guarantee a honey flavor, and it is unrelated to 'honey-flavored' products (our catalog contains no verified honey-flavored Panama coffee). A 'Honey Roast' name can still mean honey process: Finca Lérida's Honey Roast is confirmed by the seller as honey-processed, not a roast level. Honey can also be combined with anaerobic fermentation.
Attributed sensory descriptions
Sellers attribute sweetness and body between washed and natural — PanamaGoods describes Lérida's honey lot as citrusy and floral with a 'juicy finish of honey, raspadura, and molasses' (the seller's words).
Seller-attributed cupping language — a processing label never guarantees a flavor.
