Experimental

'Experimental' is an umbrella label for novel fermentation, drying, or ingredient techniques that fall outside washed/natural/honey — often sold under producer-branded names (Ninety Plus' proprietary processing, Savage's Echo and Enigma, Hartmann's 'Windy Process'). It describes intent, not a method.

Typical production steps

Producer-specific and rarely published in full. What sellers usually disclose: the stage where the technique applies (fermentation vs. drying), whether the environment was sealed or inoculated, and the drying regime. Everything else is proprietary.

What the label does and doesn't establish

The label tells you the seller did something non-standard — nothing more. Because there is no definition, two 'experimental' lots may share nothing. Panama's competition context matters here: the same country hosts documented experimental producer brands and a competition body that bans some experimental categories (fruit infusions) as 'deceptive' — so check what specifically was done, and by whom.
