Carbonic Maceration

Carbonic maceration (CM) ferments whole cherries in a sealed tank flushed or pressurized with carbon dioxide — a technique borrowed from winemaking. It is a specific, more controlled cousin of generic 'anaerobic' fermentation, with named washed and natural variants.

General coffee-processing knowledge, sourced below. Panama-specific claims are separated into their own section.

Characteristics
Wine-like, juicy, vibrant
Typical production steps
1) Load whole cherries into a sealed stainless tank; 2) purge oxygen with CO2; 3) ferment at controlled temperature for days to weeks as CO2 builds pressure; 4) then process the cherries as washed (CM washed) or dry them whole (CM natural). Some producers run multi-stage CM — for example Savage Coffees' 'Enigma' is labeled an extended natural CM process.
What the label does and doesn't establish
CM establishes that whole cherries fermented under CO2 in a sealed tank. It is not interchangeable with every 'anaerobic' label, and a 'carbonic macerated washed' lot is a washed coffee first. The label does not establish flavors, scores, or additives — yeast inoculations are a separate technique even when used alongside CM.
Attributed sensory descriptions
Sellers of CM lots attribute winey, intensely fruity, sometimes effervescent profiles; specific descriptors are the seller's own and vary sharply between lots.
Seller-attributed cupping language — a processing label never guarantees a flavor.

Documented use in Panama

Documented at one Panama producer-roaster: Savage Coffees (Finca Deborah / Iris Estate) sells multiple carbonic-maceration Geisha lots, including a washed CM ('Illumination') and an extended natural CM ('Enigma'). No other producer in this database uses the CM label.
