Process

Anaerobic

Anaerobic processing ferments coffee in a sealed, oxygen-limited environment — typically a tank or bag with a one-way valve — changing which microbes dominate and which aromatic compounds develop. Crucially, it is a fermentation technique, not a complete process on its own.

General coffee-processing knowledge, sourced below. Panama-specific claims are separated into their own section.

Characteristics
Intense, funky, complex
Typical production steps
1) Place whole cherries (natural path) or depulped parchment (washed path) in a sealed tank or bag; 2) allow oxygen to be consumed or be purged; 3) ferment for roughly 1–7+ days at controlled temperature; 4) then proceed as washed, natural, or honey. The ASD variant — Anaerobic Slow Dry, used by Lamastus Family Estates — adds a deliberate slow-drying phase after the sealed fermentation.
What the label does and doesn't establish
Anaerobic conditions can be combined with washed, natural, or honey processing — 'Anaerobic Washed', 'Anaerobic Natural' and 'anaerobic honey' all exist, so the label never tells you the whole story. Sellers abbreviate differently: 'ASD', 'anaerobic', 'nitro' (nitrogen-purged). The label establishes a low-oxygen fermentation occurred; it does not itself establish added flavors, quality, or scores.
Attributed sensory descriptions
Sellers attribute distinctive, intense fermented-fruit character — Klatch describes its Elida ASD lots as intensity-forward; individual descriptors vary by lot and are the seller's own.
Seller-attributed cupping language — a processing label never guarantees a flavor.

Documented use in Panama

Well documented: Lamastus Family Estates' Elida Estate ASD lots are sold through Klatch Coffee and LF Coffee; Black & White Coffee Roasters has offered La Victoria ASD Gesha. Panama is among the origins where anaerobic labels are most established.
